mung bean drink
   cantonese: luk dau sa
   mandarin: lu dou sha

something between a soup and a drink, it's usually eaten with a bowl and a spoon, but can also be served in a cup or glass.  the cold version is perfect on a hot summer day!

1. bring to a boil, and simmer for 1-2 hours (depending on what consistency you prefer), stirring occasionally:

      1/2 c
mung beans (rinsed)
      6-8 c water

2. add to taste:

      sugar

3. the soup can be served hot, warm or cold (refrigerated) for a delicious snack.

enjoy!

VARIATIONS:

   - for a change, add a few lotus seeds, chinese red beans, chinese black beans,
black-eyed peas, or any other kind of bean you think would be appropriate.
