crisp cucumber salad
   mandarin: cui wei gua pian

1. wash and slice into small chunks:

      1 large cucumber (long & thin kind is best)

2. mix thoroughly with cucumber:

      2 T sugar
      2 t salt

3. cover and let sit in refrigerator for any length of time between 30 minutes and 2 days.

4. remove, drain well and mix with:

      vinegar to taste
      small amount sesame oil

5. eat.

you can also add daikon radish or other kinds of radish in step 1
