carrot stir-fried with tofu skins

i've never seen this recipe anywhere else -- i learned it from a taiwanese vegetarian cook.  it's a very simple dish, but the blend of flavors is stunning and unique.  golden, gingery and sweet-without-sugar.

1. soak in water for a few minutes until soft:

     
dried tofu sheets

2. chop into long matchsticks:

      a little ginger, peeled
      carrots, peeled or unpeeled

3. remove the tofu sheets from the water and slice into strips.

4. heat a little oil in a pan or wok, then add the ginger.  before the ginger turns brown, add the carrots.  stir a while, and before the carrots are fully cooked, add the tofu sheets.  stir a while, and add:

      a little water
      a little salt

5. let it cook, still stirring, until the liquid is almost gone -- the liquid should be orange or yellow-colored.  if it isn't, add a little more water and wait.  this will take a few minutes, so be patient -- but don't overcook.
