| basic leavened dough this dough is easy to make and can be used for all kinds of steamed or baked buns. 1. mix until dissolved: 1.75 c warm water 1/4 to 1/2 c sugar 2. add: 1/4 oz (7 g or about 2.5 t) yeast 4. leave the mixture in a warm place for 15 minutes or until it becomes very foamy, then mix with: 6 c flour 2 T oil 1 T baking powder 5. knead dough until smooth. add water if too dry; add flour if too wet. 6. let stand, covered, in a warm place for 2 hours or until dough has tripled in bulk. if you can, knead a few times during this 2-hour period. knead again before using. return to the veggie asia home page |
