(Rice Muffins)

Ingredients:
2 cups rice flour
2 cups coconut milk
1 cup grated coconut
1 cup white sugar
3 tsp. baking powder
1/2 tsp. salt


In a mixing bowl, mix rice four, coconut milk, salt and baking powder together.  Blend well to make a smooth mixture.  Mix and blend thoroughly and fill greased muffin pans 2/3 full.  Cook in a steamer for 30 minutes.  Muffins are done when cake tester or toothpick is inserted at the center and comes out clean.  Serve hot with grated coconut.
