Preheat oven to 170°C. Line and grease a round 8-inch baking tin. |

Combine egg white and castor sugar. Whisk until the mixture is stiff, then leave aside. |

|
3. |
In a separate bowl, beat cream cheese, egg yolks and margarine until the mixture is smooth. |

|
4. |
Add lemon juice and fold in self-raising flour into the cream cheese mixture. |
||||
|
5. |
Fold in the egg white mixture. Add vanilla essence. |
||||
|
6. |
Spread the mixture evenly in the baking tin and bake bain marie style. |
||||

| Note: | Bain marie, also known as water bath, is a style of baking where the baking tin is placed in a larger, water-filled container to stabilize the heat reaching the food. Also useful for keeping sauces warm or melting foods like chocolate that burn easily. | ||||
