Simple Tomato Sauce
makes 4 cups
I got this recipe out of my favorite cookbook, How to Cook Without a Book. I make a batch of this sauce, serve it over angel hair pasta, and freeze the rest in 1 cup containers. It is so good you'll never want to use bottled sauce again!

3-4 tbsp. virgin olive oil
3 medium garlic cloves, minced
1 tsp. Italian seasoning (more to taste)
1 (28 oz) can crushed tomatoes
salt and pepper to taste

In a large saucepan, slowly heat olive oil, seasoning, and garlic (do not burn!). Add tomatoes. Bring to a simmer over medium-low heat until sauce thickens and flavors meld. Season to taste.
