| Broiled Chicken Fajitas |
| I love this recipe for chicken fajitas. I plan on making up a few batches of the marinade and freezing the chicken breasts with the marinade for after the baby comes. I allow 1 chicken breast per person. Serve with tortillas, cheese, sour cream, and salsa. 2 boneless, skinless chicken breasts 1 tbsp. lemon juice 1/2 tsp. garlic powder 1/2 tsp. seasoned salt 1/4 tsp. each oregano and pepper Few drops liquid smoke flavoring (don't skip this!) 1 tbsp. oil 1/2 cup green pepper strips 1/2 cup thin onion slices In a ziplock bag, combine the first seven ingredients and 1-1/2 tsp oil. Refrigerate 2-8 hours. Broil chicken until no longer pink. Meanwhile, in a large skillet, saute green peppers and onions in remaining oil until crisp-tender. Slice chicken, warm tortillas, and serve! |
