Recipe For Banitza---Bulgaria

The Banitza is a traditional Bulgarian food that is prepared for all celebrations. In the past Bulgarian women used to make the fillo of pastry by pressing dough into thin sheets and made it entirely with butter. Today, we purchase the pastry from the store. And to limit the cholesterol, we use more oil instead of butter.

Ingrediants
  • 5 eggs
  • 500g feta cheese
  • � cup of oil
  • 500g fillo pastry
Directions:
  • Beat eggs and mix with shredded cheese
  • Take a sheet of fillo pastry and pour a spoonful of oil on it.
  • Mix the eggs and the cheese together and then pour a tablespoon of it over 2/3 of the pastry.
  • Roll the pastry, and push together on both sides
  • Place in an oiled pan
  • Repeat until the product are used up
  • When the pan is full, on top of the pastry put slices of butter
  • Cook at 120 C for about 1 hour and 15 minutes
  • When the Banitza is ready, spray it with water and cover with a cloth
