Raisin Wine
Note that this recipe requires a great deal of time!
1 gallon water
5lb raisins
1 pint brandy to every 2 gallons
Time: a fortnight, then 6 months in a barrel.
Pick the raisins from their stalks and pull in two. Steep the raisins in water for two weeks, stirring daily. Pour off the liquor and squeeze the juice from the raisins. Put the liquor into a barrel which will just hold it. Let it stand open until the wine has finished hissing or making any noise. Add a pint of brandy to every 2 gallons. Close the barrel. Let it stand for 6 months before bottling. Do not draw out too near the bottom of the barrel.
