Fried Herrings in Oatmeal
A traditional Scottish recipe
Cooking time: 10 minutes
4 herrings
1 beaten egg
4 ounces oatmeal
4 ounces cooking fat
For the sauce: 1/4 pint tomato ketchup
4 chopped pickled gherkins
1 tablespoon capers
To garnish: lemon and parsley
Clean and fillet herrings, wash and dry thoroughly. Dip in beaten egg, then coat thoroughly with oatmeal. Heat fat in a frying pan until hot. Cook herrings on both sides under a gentle heat for 4-5 minutes. Heat the tomato ketchup and stir in gherkins and capers. Pour the sauce over the herrings and garnish with lemon and parsley.
