Grouse Casserole
Cooking time: 2 1/2 - 3 hours
Oven temperature: 300-325° Farenheit, Gas Mark 2-3
1 ounce flour
2 medium grouse
4 ounces streaky bacon
2 ounces fat
1 onion
4 carrots
1/2 swede
1/2 pint stock
seasoning
4 tomatoes
bay leaf
Flour the grouse and dice the bacon. Fry the grouse in the hot fat for 10 minutes, adding the bacon halfway through. Lift out and put into a casserole. Fry the chopped onion, carrots and diced swede in the fat for a few minutes. Gradually add the stock, bring to the boil and cook until thickened and smooth. Season well. Pour over the grouse, adding the tomatoes and bay leaf, and cover with a lid or tin foil. Cook gentle for about 2 1/2 hours in a slow or moderate oven. Remove bay leaf before serving.
