Iced Cherry Soup
Cooking time: 25 minutes
1 1/2 pounds or 1 can cherries
Water
Juice of 1 lemon
Sugar to taste
To garnish: mint
Cover the fruit with water. Simmer gentle, adding lemon juice and sugar to taste. Reserving a few cherries for the garnish, rub through sieve and pour into freezing trays to lightly freeze. Serve in soup cups decorated with the remaining whole cherries and mint leaves.
