Roasted Barley ( see worthog Jeremy Wallace method) 1280 g Pale malt 12kg's Yeast Safale ( NFP ) made 2 liter starter on week before 1 tsp Gypsum 15ml Phosphoric Acid 5mls Lactic acid into mash 60g Southern Brewers alpha 9 % Method Single mash infusion strike temp 75 C Ave temp of mash 65 C for 1 ,5 hours Sparged till sg 1012 Boiler start 82 liters end 75 lit sg 1040 ( 1,5 hours boil ) Irish moss 1 tbsp 15 min before end of boil . chilled down to 16 C ( ambient 19 C ) Fermented at about average of 18 to 19 C
