Italian Marinated Roasted Peppers

For best results, use yellow, red or orange peppers.


1. Preheat oven to 120C.

2. Place whole peppers on a baking tray and bake for about an hour until lightly golden brown and soft.

3. Straight from the oven, place in a plastic food bag, seal and refrigerate - this makes them easier to skin later.

4. When cool, skin and deseed.

5. Cut into pieces about 4x2cm.

6. Slice a clove of garlic finely and add to olive oil.  Add some capers if you like.

7. Place pepper pieces in a plastic box (or a bowl) and add garlic & olive oil mix.  Refrigerate overnight.


Goes really well with soft cheese and fancy bread i.e. olive loaf or rosemary foccacia.
