| Caramelised Onions 1. Peel onions and slice fairly thinly. 2. Heat a little oil in a big pan and fry the onions, starting on a high heat and then turning down to a medium heat once the onions start to brown. Stir frequently. 3. Once the pan starts to dry out, add some red wine, port, beer or balsamic vinegar. (It's best to use wine that's been open a bit too long to drink, port that's cheap or flat beer - for the obvious reasons.) Continue stirring. 4. Sprinkle very liberally with sugar and stir well. 5. Repeat step 4. 6. Add a bit more wine/port/beer/balsamic vinegar. Stir well. 7. Repeat step 4. 8. Turn to a low heat and stir every 5 minutes for an hour while you cook tea or wash up or something. (The scheduling of Sky TV is based around cooking caramelised onions, with adverts breaks every 5 minutes that are long enough for you to get to the kitchen for a good stir and get back in time.)
