Tomato Pie
1 cup biscuit mix
1/4 cup water
1 tablespoon soft butter
4 to 5 medium tomatoes, peeled and sliced 1/2 inch thick
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1 to 2 scallions, minced
3 tablespoons minced fresh parsley
2 tablespoons fresh basil

In bowl, mix biscuit mix, water and butter and press into 8 or 9 inch pie pan.  Layer tomato slices over crust.  add cheddar cheese.  Combine mayonnaise, scallions, parsley and basil. 

Spread over cheese.  Bake in 350 degrees oven for 30 minutes in lower half of oven.  Serve immediately.  Makes six servings.  Enjoy!
