| Sparkling White Grape Cheeesecake |
| 1 1/2 cups bolling water 1plg.(8-serving size or 2 pkg.4-serving size) Jello Sparkling white grape flavor gelatin 2 cups cold ginger ale or club soda 1 1/2 cyos graham cracker crumbs 1/2 cup butter or margarine, melted 1/2 cup sugar, divided 1 plg. (8oz.) cream cheese softened 1 tub (8oz) cool whip topping, thawed 2 cups assorted fruit, such as red and green grape halves, blueberries, raspberries and canned mandari oranges Stir the bolling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold ginger ale. Refrigerate 1 1/4 hours or until slightly thickened (consistency of unbeaten egg whites). Mix the crumbs, butter and 1/4 cup sugar in 13x9-inch baking dish, press firmly onto bottom of dish. Refrigerate untill ready to fill. Beat cream cheese and remaining 1/4 cup sugar in large bowl with wire whisk until smooth. Gently stir in whipped topping. Spread evenly over crust. Place fruit in rows over cream cheese layer. Splln thickened gelatin over fruit. Refrigerate 3 hours or until firm. makes 16 serving. |
