| Very Good Banana Bread |
| 2 cups sugar 1 cup shortening 6 medium bananas (ripe), mashed 4 well beaten eggs 2 1/2 cups flour 1 teaspoon salt 2 teaspoons baking soda Cream sugar and shortening, add bananas and eggs. Shift dry ingredients together. Blend wet and dry ingredients. Pour into two lightly greased and floured loaf pans or in a 10 inch tube pan. (I use a Bundt pan). Bake 45 to 50 minutes at 350 degrees. Check for doneness. And 1/2 cup of chopped nuts (lots of nuts), if desired. (I add 1 cup or even more nuts.) |
