Lima Beans and Ham Soup


1 large hamhock
1 lb. lima beans
1 cup (more or less) each:
     chopped carrots
     chopped onion
     chopped celery
2 bay leaves
salt & pepper to taste

Clean and soak beans for 4 hours or overnite.  Place hamhock in large pot and cover with water. Bring to a boil, reduce heat and cover.  Simmer for about an hour. Save the water.  Shred the meat off the hamhock with your fingers and discard all the fat and bone. Rinse beans well, and add to hamhock meat and water. Add remaining ingredients.  Simmer covered for 2 to 3 hours.  Can thicken it up a little with a mixture of flour and water.
