Sweet Mustard Pickles


12 large cucumbers, peeled and seeded
4 lb pearl onions, cleaned
Soak the above ingredients 4 hours or overnite in 1 cup salt and 1 gallon of water. Strain and rinse well.
Add:
3 cups sugar
4 cups white vinegar
1 Tbls tumeric
Boil about 30 minutes.
Make a paste:
2 Tbls dry mustard
5 or 6 Tbls flour
enough water to make paste
Pour while stirring into boiling mixture until thickened. Add 1 small jar pimento if desired. Cook for 20 minutes and then pour into canning jars and process.
