Salisbury Steak

1  1/2 lbs. ground beef
2 eggs
6 Tbls. finely crushed Ritz crackers
2 Tbls. finely chopped onion
1 tsp salt
1/2 tsp pepper
1/2 tsp rubbed sage

Combine all ingredients well and then add ground beef. Mix well and form into patties. In medium skillet cook patties about 5 minutes on each side. Drain and then remove to platter and keep warm while you make the gravy.
Gravy:  melt 4 to 6 Tbls. butter or margerine in skillet, then add 1 small can of mushroom stems and pieces (drained). Saute for 2 minutes and then add 5 to 7 Tbls. flour; blend well and add about 3 cups water and 4 to 5 beef bouillon cubes. Cook and stir until smooth and thickened. Add Kitchen Bouquet for color if desired. Return patties to gravy and cook another 10 minutes over low heat.
