Pumpkin Cake w-Icing


Cake Ingredients:
4 Eggs
2-Cups Sugar
1-Cup Oil (or 1/2 cup oil and 1/2 cup crushed pineapples, drained)
2-Cups Flour
2-teaspoons Baking Soda
1-teaspoon Baking Powder
1/2-teaspoon Salt
1-teaspoon Vanilla
2-Cups Pumpkin (canned works well-Libbys)
1-Cup Walnuts (chopped)

Directions:
Sift together, All dry ingredients.
Add Liquids and mix well. Pour into a greased and floured 9x13x2-inch pan.
Bake in a 350-degree oven for 45 to 60 minutes.
(until tooth pick inserted into the center comes out clean.)

Cream Cheese Icing

Icing Ingredients:
1-pkg (3-oz) Philly Cream Cheese
1-box (3 1/2-cups) Powdered Sugar (sifted)
1 stick (8-Tablespoons) Butter (not margarine)
1-teaspoon Vanilla
1-Cup Walnuts (crushed)

Directions:
Cream together; Cream cheese and butter.
Add Vanilla and continue beating.
Add 2-3 tablespoons (at a time) of Powdered Sugar to the creamed mixture...
beating well after each addition.
Continue adding until all suger is added or until you get a good spreading consistency.
Spread over top of cool cake.
