Pina Colada Wedges 8 oz. softened cream cheese 1/3 cup sugar 2 Tbls rum or 1/2 tsp rum extract 3 1/2 cups Cool Whip 1 small can crushed pineapple 2 2/3 cups coconut Beat cream cheese with sugar and rum until smooth. Fold in 2 cups of the Cool Whip, pineapple with juice, and 2 cups of the coconut. Spread in a 8-inch dish lined with plastic wrap. Invert pan onto serving plate and remove pan and plastic. Spread with remaining whipped topping and sprinkle with coconut. Freeze until firm, about 2 hours. |
