Carol's Famous Carrot Cake 3 cups grated carrots 1 cup chopped nuts 2 cups sugar 1 1/2 cups vegetable oil 4 eggs, beaten 3 tsp cinnamon 1 tsp salt 2 tsp baking soda 1 tsp vanilla 2 cups flour Mix ingredients well, adding nuts and carrots last. Bake for 45 to 55 minutes at 375. Cool. Frosting: 1 (8 oz.) cream cheese 1/2 cup margarine 1 tsp vanilla 1 box (1 pound) powdered sugar Mix together, adding milk to thin. Carol Scheinder Sandy, UT |
