Apple Nut Bundt Cake

1 cup vegetable oil
1 1/2 cups sugar
3 cups chopped apples
3 eggs
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
3 cups flour
1 cup chopped nuts

Combine all ingredients well. (batter will be very stiff) Grease and flour bundt pan or 10-inch tube pan and bake at 350 for 1 hour. Sprinkle with powdered sugar. Store tightly wrapped. This cake gets moister the next day.
