Autumn Apple Bread
1/4 cup shortening
2/3 cup sugar
2 eggs, beaten
2 cups flour, sifted
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups coarsly grated, peeled apples
1 Tbls grated lemon rind
2/3 cup walnuts
Cream sugar and shortening until light and fluffy; beat in eggs. Sift flour, baking powder, soda, and salt together. Add alternately with apples to egg mixture. Stir in lemon rind and nuts. Bake in greased and floured loaf pan 9x5x3 in preheated oven at 350 degrees for 50 to 60 minutes. Cool before slicing.
