Best dishes for summer harvest. Take longer to prepare
Salad:
| Cucumber | 4 large or 5 medium |
| Tomatoes | 2 large or 3 medium, firm |
| Parsley | 1/3 cup fresh chopped |
| Red Onion | 1 medium thinly slice |
Salad Dressing:
| Italian Salad Dressing Mix | 1 Pk "Good seasons" |
| Water | 1 cup |
| Vinegar | 1 cup |
| Salt | 3/4 tea spoon |
| Sugar | 4 table spoons |
| Soy Sauce | 2 table spoon |
| Black Pepper | 1/4 tea spoon |
| Olive Oil | 1/8 cup |
Cucumber cut 1/4 inch thick.
Tomatoes cut 1/2 thick
Marinate cucumber in the dressing (in the refrigerator) 3 hours before serving.
Marinate red onion in the dressing 1 hour (at room temperature )before serving.
Add tomatoes last just before serving. Sprinkle with fresh parsley (or if you don't have it, dry parsley would do)
Serve immediately after tomatoes are added.
