Butchering,processing, and smoking meat has became one of my favorite hobbies.I have a simple and a but crude setup at my home but I always strive for the best product I can turn out.
I have spent many hours doing research and a lot of time of hands on labor trying to prefect my process.Every year I add to my collection of equipment to make my hobbie and my products eaiser, more efficeint,and to improve quality.Every year my products get better and more enjoyable.I get real satisfaction out of hearing people tell me, "That is the best I ever ate," or as the wife of one of my friends said, "You can't but a ham like that."m Comments like that really make me feel good although as we all know the real pleasure is in eating and enjoying your own products.
We own five acres of land in the foothills of West (smile when you say it,by God )Virginia.Here I was born and although I have wondered off from time to time I always return home because West Virginia truly is HEAVEN!

Every year we purchase beefs and hogs to use in our home.In the fall I deer hunt and use venison in many of my recipes,hell its free.I use all three meats to produce products such as,summer sausage,breakfast sausage,italian sausage,canned meat, jerky,and slim jims.I cure and smoke my own hams and bacons which have become a favorite of our family.Each year iI try to branch out into at least one new product and stay with it until I get desirable results.
My dad first introduced me to curing and smoking when I was young and I take great pride in carrying on what he taught me. Today to many people are content to get everything from the store,but there is such joy,pride and sense of accomplishment in being able to do it yourself.
