| Chicken Salad 1 lb. boiled and drained boneless Chicken Breasts with Skin removed 2 stalks celery 1/4 c. slivered almonds or walnuts (optional) 1/4 c. green grapes halved (optional) 1/2 c. mayonnaise 1 green onion 1/4 tsp. white pepper nutmeg to taste 1/4 c. parsley In a food processor, chop parsley and green onion until finely chopped. Add cut up chicken celery, spices and mayo. Process on high until the proper consistency is achieved. Fold in nuts and grapes. Chill and then stuff into tomato cups or serve as a sandwich with crisp lettuce. Cream cheese may be added as well for tea sandwiches. Garnish with cucumber slices. |
