| Zucchini Relish |
| 10 c. zucchini peeled 4 c. onions 4 tbsp. salt 2 1/4 c. cider vinegar 6 c. sugar 1 tbsp. each nutmeg and turmeric 2 tbsp. each cornstarch and celery seed 1/2 tsp. black pepper |
| 1. Grind zucchini and onions, add salt. 2. Let stand over night. 3. Drain and rinse in cold water and drain again. 4. Add remaining ingredients, cook for 30 minutes. 5. Add red and green peppers for color. 6. Seal in sterilized jars. |
