Stuffed Cucumbers
Stuffed cucumbers make great treats for a back yard barbeque.
Here are several fillings for you to try.


Cut one large cucumber cut lengthwise.  Make sure you only cut off 1/4, leaving 3/4 remaining.  Hollow out with a fruit scoop or a spoon.  Reserve cucumber meat for later use.


Summer Salmon
1/4 lb. cooked, drained and flaked salmon
diced cucumber pulp
1 tsp. horseradish
1 tsp. minced onion
1 tsp. lemon juice
1/4 tsp. white pepper
several sprigs of fresh dill weed


Combine all ingredients.  Stuff into the cucumber.  Garnish with dill and red pepper strips.


Shrimp and Cucumber Boats


1/2 lb. cooked, peeled and chilled shrimp
1 tbsp. room temperature cream cheese
1 tbsp. mayonnaise
1/2 c. chopped celery
cucumber pulp
1 tsp. lemon juice
1 tsp. thyme
cayenne pepper to taste


Mix all ingredients.  Stuff into cucumber.  Garnish with red onion rings.
