| Black Bean and Cheese Dip with Rotel Tomatoes |
| 2 cans of black beans 1 can Rotel Tomatoes with Green Chilis 1/2 c. shredded Cheddar or Monterey Jack 1- 6 oz. can V-8 1 tsp. minced garlic 1/2 tsp. cumin 1/2 tsp. corriander 1/4 tsp. tumeric 1/2 c. chopped cilantro or parsley |
| 1. In a food processor, minced spices and herbs with V-8 juice. 2. Add Rotel Tomatoes. Process about 20- 30 seconds. Tomatoes should be chunky, not pulverized. 3. Combine the tomato mixture with the beans and top with cheese. 4. Microwave on high power for about 5 minutes or until the cheese is melted. Serve with Nacho Chips or Tortilla Triangles. |
