Chicken Tikki Masala

Ingredients Part One

2 pounds Boneless Chicken Breasts
1/4 cup Plain Yogurt
3 teaspoons minced Ginger
3 teaspoons chopped Garlic
1/4 teaspoon Cumin powder
1/4 teaspoon Mace
1/4 teaspoon Nutmeg
1/4 teaspoon Cardamon powder
1/4 teaspoon Chili powder
1/4 teaspoon Turmeric
3 tablespoons Lemon juice
2 tablespoons Vegetable Oil
Skewers for Chicken pieces

Ingredients Part Two

5 ounces Tomato paste
10 ounces Tomato puree
1/2 Onion chopped
1/2 Red Pepper seeded and chopped
1 cup Water
1 Pint Whipped cream
2 slices Pepper Jack Cheese
Salt to taste
Curry powder to taste

Directions

1 Cut the Chicken Breast into 1 inch pieces. Set aside.

2 Combine Part One Ingredients into a bowl and mix thoroughly. Add Chicken pieces and set aside for 2-8 hours.

3 After Chicken has sufficiently marinated, thread on skewers and barbeque or grill until slightly browned

4 Meanwhile in a large saucepan combine Tomato paste tomato puree over low heat. Add Water, a pinch of Salt and Curry powder and stir gently.

5 Add half the pint of Whipped Cream into the saucepan and stir well. Add Cheese and stir until melted.

6 Taste sauce. Should be creamy, thick and delicious. When satisfied, add the chicken pieces and simmer for five minutes, stirring regularly.

7 Serve beside or over rice.

The Verdict

The addiction began suddenly in 1989 at the Raga Indian Cuisine in Downtown Bellevue. The explosive and savory taste of Tandoori cooked and marinated chicken amidst a gentle tomato creamy sauce, enlightened the taste buds. Chicken Tikki Masala attracted such a local following, when the Raga was tragically gutted by fire in summer of 2000 loyal patrons took extreme measures to "get their fix". Fortunately Raga reopened near the Waterfront in Kirkland less than a year later and the addicts are back in record numbers. The key to the Tikki masala taste the lay in the gentle ratio between the tomato products, the cheese and the whipped cream. Patience and a thick skin are not listed ingredients, but requirements especially when cooking for friends or family. Allow for a few blunders and visits to Raga in the process of mastering the sauce. If failure results, the saving grace revolves around the Weber and some tasty Chicken Skewers.
