Strawberry Pound Cake

12 servings

1 16 oz. package Deluxe Strawberry Cake Mix, Duncan Hines
1 3 oz. package Instant Vanilla Pudding Mix
1/2 cup oil
1 cup water
4 each eggs
1 cup confectioners' sugar
1 1/2 tablespoons milk
1 teaspoon oil
1/4 teaspoon vanilla extract

Preheat oven to 350 degrees. Grease and flour tube pan. Blend first five ingredients; beat at medium speed for 2 minutes. Bake 45-55 minutes (check with toothpick). Cool in pan for 25 minutes. Remove from pan and frost when cool, with remaining ingredients blended well. Add a couple of drops of red food coloring to icing, until it is pink color desired. Sift a little confectioners' sugar over top.

Variations: At Christmas time this is pretty decorated with gum drops. For Valentines Day, decorate with tiny red heart- shaped candies and bake in 2-9" heart shaped pans for 25-20 minutes.
