My favorite Squash Casserole recipe and so easy!

1 pound yellow squash, cut in slices, fresh or frozen
1 each onion, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup margarine
1 cup saltine crackers, crushed
1/2 cup milk
1 each egg, slightly beaten
1 cup cheddar cheese, grated & divided

In a medium, covered saucepan cook squash and onion, until tender. Remove from heat and drain. Add salt, pepper, margarine, crackers, milk, egg and 1/2 cup of cheese; stir until well blended. Pour into 1-1/2 quart casserole dish. Sprinkle with remaining cheese. Bake at 350 degrees for 30 minutes and let stand 10 minutes, before serving.
