My
favorite Squash Casserole recipe and so easy!
| 1 | pound yellow squash, cut in slices, fresh or
frozen |
| 1 | each onion, chopped |
| 1/2 | teaspoon salt |
| 1/2 | teaspoon black pepper |
| 1/4 | cup margarine |
| 1 | cup saltine crackers, crushed |
| 1/2 | cup milk |
| 1 | each egg, slightly beaten |
| 1 | cup cheddar cheese, grated &
divided |
In a
medium, covered saucepan cook squash and onion, until tender.
Remove from heat and drain. Add salt, pepper, margarine,
crackers, milk, egg and 1/2 cup of cheese; stir until well
blended. Pour into 1-1/2 quart casserole dish. Sprinkle with
remaining cheese. Bake at 350 degrees for 30 minutes and let
stand 10 minutes, before serving.
