Coconut Custard Pie

Mr. Carl's Coconut Custard Pie

This was my step-father's favorite pie and so easy to make!

8 servings

2 cups milk
1 teaspoon vanilla
1/4 cup margarine, softened
4 each eggs
3/4 cup sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1 cup flaked coconut
1/2 teaspoon nutmeg

Place in blender and blend all ingredients, except coconut and nutmeg, for 3 minutes. Pour into a greased 10-inch glass pie plate. Let stand for 5 minutes. Sprinkle with coconut and then nutmeg and bake at 350 degrees for 40 minutes.
