
This was my step-father's favorite pie and so easy to make!
8 servings
| 2 | cups milk |
| 1 | teaspoon vanilla |
| 1/4 | cup margarine,
softened |
| 4 | each eggs |
| 3/4 | cup sugar |
| 1/2 | cup all-purpose
flour |
| 1 | teaspoon baking
powder |
| 1 | cup flaked coconut |
| 1/2 | teaspoon nutmeg |
Place in blender and blend all
ingredients, except coconut and nutmeg, for 3 minutes. Pour into a greased 10-inch glass
pie plate. Let stand for 5 minutes. Sprinkle with coconut and then nutmeg and bake at 350
degrees for 40 minutes.
