Cheddar Cheesy Pear Cobbler

Cheddar Cheesy Pear Cobbler

12 servings

3 16 oz. cans pears, packed in juice, undrained
1 cup brown sugar, firmly packed
1 cup flour, self rising
1 cup milk
1 each egg
1 1/2 cups sharp cheddar cheese, shredded, divided
1/4 cup butter, melted
1/4 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, chilled and cut into small pieces
1 cup pecans, finely chopped

Drain pears, reserving 1/2 cup juice. Combine reserved juice and brown sugar in a small bowl; stir until sugar dissolves. Arrange pears in a single layer in a lightly buttered 13-x9-x2-inch baking dish. Pour juice mixture over pears; set aside. Combine self-rising flour, milk, and egg in a medium mixing bowl; whisk until smooth. Stir in 1 cup of cheese. Pour milk mixture evenly over pears, and drizzle with melted butter. (Do not stir.) Combine all-purpose flour, sugar, and cinnamon in a medium bowl; cut in butter using a pastry blender until mixture resembles coarse meal. Stir in pecans. Crumble mixture evenly over pears. Bake at 350 degrees for 35 minutes or until golden brown and bubbly. Sprinkle with remaining 1/2 cup cheese, let stand 10 minutes before serving.
