Broccoli Corn Bread

8 servings

For the holidays, add a few chopped pimentos.

1 10 oz. package frozen chopped broccoli, thaw and drain
6 ounces cottage cheese
3/4 stick margarine, melted
8 1/2 ounces corn muffin mix, Jiffy
1/2 teaspoon salt
1 each onion, medium, chopped
4 each eggs, beaten

Combine all ingredients and mix well. Bake at 400 degrees in 13x9x2-inch greased pan for 20 to 30 minutes
