| Weiner Schnitzel (veener shnitzl) -- this is a very versatile main course, you can serve it with anything, or nothing at all-i'd eat it by itself it's soooo good! INGREDIENTS 1 package pork tenderloins (if you get pork chops w/ bones, you have to cut away the bone) 1 can bread crumbs (seasoned or not, your choice-you won't use it all) 1 dozen large eggs (you won't use them all) margarine as needed UTENSILS 1 10-12" non-stick skillet & 1 spatula 1 tenderizing mallet 1 cutting board 2 large bowls PREPARATION Place half the breadcrumbs in one of the large bowls; crack 4-5 of the eggs into the other bowl and blend & set both bowls aside until needed. Using the tenderizing mallet, place the tenderloins one at a time on the cutting board and beat each one until paper thin (hold it up and try to look through it, you should be able to almost see through it). Heat the skillet on medium Dip each tenderloin first in the egg mixture, then into the breadcrumbs, coating evenly. Take a small amount of margarine and coat the bottom of the skillet, then place the tenderloin into the skillet, cooking 3-4 minutes on each side until browned (you'll need to add more margarine when you turn it over, most likely) Repeat with each tenderloin, using the margarine before placing into the skillet and when turning to prevent the meat from burning. |
| Homemade Pizza INGREDIENTS 1 package Crust mix (i use martha white brand) 1 package pizza sauce (i use ragu pizza quick) 1 package pizza blend cheese (i use Kraft) Toppings as desired (pepperoni, ground beef, mushrooms, etc.) PREPARATION Preheat oven and prepare crust per package directions If using ground beef for topping, brown in skillet & drain while preparing crust Bake crust per package directions (5 minutes in my oven) Spread sauce evenly on crust, add toppings (i use ground beef, pizza cheese & pepperoni) & bake per package directions (10 minutes in my oven) |
