Corn Meal Cookies
3/4 cup shortening 3/4 cup sugar 1 egg 1-1/2 cup flour 1/2 cup corn meal 1 tsp. baking powder 1/4 tsp. salt 1 tsp. vanilla 1/2 cup raisins (optional) |

Mix shortening, sugar and egg; beat well. Add rest of ingredients and mix well. Drop by teaspoon on greased baking sheet. Bake at 350 degrees until lightly browned. Makes about 3 dozen. (When I mixed this I added a couple of T. of water to loosen the batter a bit.) |

Golden Corn Cake
3/4 cup corn meal 3/4 tsp. salt 1 cup flour 1/3 cup sugar 5 tsp. baking powder 1 cup milk 1 egg, well beaten 2 T. melted shortening |

Mix and sift dry ingredients. Add milk, egg and shortening. Bake in greased pan 20 minutes at 425 degrees.
(This is a sweet cake that could served as corn bread with the meal or desert.) |

Persimmon Pudding
1 cup persimmon pulp 1 cup sugar 1 egg 1 cup flour 1 cup milk 1 tsp. baking powder 1 tsp. cinnamon 4 T. butt |

Mix ingredients in order given, melt butter in 8x8 pan, pour melted butter into batter, mix then pour into pan.
Bake at 350 degrees for 30 minutes. |

Spicy Persimmon Bread
3 cups flour 1 tsp. salt 2 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. cloves 2 cups sugar 2 eggs |

2 cups persimmon pulp 1-1/2 cups oil 1/2 cup chopped nuts 1/2 cup raisins (optional)
Sift dry ingredients into bowl. Beat eggs and add to pulp, then add liquids. mix wet and dry ingredients together and add nuts and raisins. Divide into 2 loaf pans.
Bake at 350 degrees for 1 hour. |

Easy Home Made Ice Cream
2 eggs beaten 2 sugar 1 can Eagle Brand
Blend sugar into beaten eggs and add Eagle Brand and beat until creamy, add enough milk to bring mixture to fill line on one gal. freezer. Adjust mixture for 1-1/2 gal. freezer. |
