Turkey Gumbo
1 tbsp all purpose flour
2 tsp olive oil
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green pepper
2 garlic cloves, minced
1 (14 1/2 ounce) can chicken broth
3/4 cup drained canned diced tomatoes
1/2 cup frozen whole kernel corn
1/2 tsp hot sauce
1/4 tsp dried thyme
1/4 tsp pepper
Dash of salt
1 bay leaf
1/2 cup fresh or frozen okra, thawed
6 ounces sliced roast turkey breast
1. Place flour in a large saucepan. Cook over medium high heat 7 minutes or until very brown, stirring constantly with a whisk. (If flour browns too fast, remove from heat; stir constantly until it cools down). Place browned flour in small bowl.
2. Heat oil in pan over medium high heat. Add onion, celery, green pepper and garlic. Saute 4 minutes. Sprinkle vegetables with browned flour; cook 1 minute, stirring constantly. Add broth and all other ingredients, except okra and turkey. Bring to a boil. Reduce heat and simmer, uncovered, 15 minutes. Add okra and chopped turkey; bring to a boil. Reduce heat, simmer, uncovered, 15 minutes. Discard bay leaf.
