Curried Pork Bites

 

 

     Ingredients:

   

    1 lb Pork tenderloin  (Beef, lamb or turkey can be used)

    2 Tbsp curry powder or garam masala

    1 green onion finely chopped

    2 cloves garlic, minced

    1 Tbsp grated fresh ginger

    1 Tbsp cooking oil

    1/8 tsp red pepper  (David:  more!)

    1/2 cup plain yogurt

    2 Tbsp snipped fresh cilantro.

 

 

Directions:

 

Combine curry powder, onion, garlic, ginger, oil and red pepper in a bowl.  Stir in pork, working spice mixture into the meat with fingers.  Thread the meat onto metal skewers, leaving 1/4 inch between pieces; refrigerate 1 to 24 hours.

 

Grill for 12 to 15 minutes or until juices run clear.  Meanwhile, stir together yogurt and cilantro.

 

Dip into yogurt to serve.
