Beef and Broccoli

Ingredients:  
{Serves 4} 

12 ounces sirloin steak

1 T cornstarch

1 t sesame oil

12 ounces broccoli, cut into small florets

4 scallions, sliced diagonally

1 medium carrot, cut into short thin sticks

1 garlic clove, crushed

1-inch piece fresh ginger, cut into very fine strips

1/2 cup beef broth

2 T soy sauce

2 T dry sherry

2 t light brown sugar.  

 

Procedures:  

Trim the beef and cut into thin slices across the grain. Cut each slice into thin strips. Toss in the cornstarch to coat thoroughly.

Heat the sesame oil in a preheated wok or large nonstick frying pan. Add the beef strips and stir-fry for 3 minutes. Remove and set aside.

Add the broccoli, scallions, carrot, garlic, ginger and broth to the wok or frying pan. Cover and simmer for 3 minutes. Uncover and cook, stirring, until the broth had reduced entirely.

Combine the soy sauce, dry sherry and brown sugar together and add to the wok or frying pan with the beef. Cook for 2-3 minutes or until it is cooked, stirring continuously.
