My Recipe Page

Here are a few of my favorite recipes.  If you have any of your favorite recipes you would like to add to the collection, please send us an email and we’ll be happy to add them.

 

 

Cheese Ball

2 boxes of cream cheese

1 bag of pecans (crushed)

1 green sweet pepper

1 onion

½ jar of bacon bits

    Mix all ingredients together in a bowl.  It may be better to stir the ingredient together by using your hands.  Use ½ bag of pecans in the cheese ball mixture.  Save the other ½ to roll the cheese ball in.  Roll mixture into a log.  Then, roll the remainder of the pecans onto the log.  Refrigerated, Then serve & enjoy!!!

 

 

Chocolate Chip Cookies

2 ½ cups of self rising flour

¾ cup blue bonnet stick butter, melted

1 ½ cups of brown sugar

1 egg

2tbsp. Vanilla extract

1 bag of semi-sweet chocolate chips

     Preheat oven to 350 degrees; in a large bowl combine all of the ingredients together.  Add chocolate chips to mixture.  *Sometimes I add a heaping tablespoon of peanut butter and molasses to the cookie mixture when I have them on hand. *

      For each cookie, drop a heaping tablespoon of dough onto a cookie sheet, leaving about 2 inches in between each cookie.  Bake at 350 degrees for 10-11 minutes or until edges harden and center are soft.  Cool on a cookie rack and enjoy!!!

 

 

Benita’s Peppermint Bark

1 package of white chocolate squares

1 large peppermint stick (crushed)

Peppermint Candy Oil

        In a double boiler melt the package of white chocolate.  When the chocolate has melted, add a couple of drops of the peppermint oil, do not add too much, as this is very strong flavoring.  Next, stir in the crushed peppermint stick.  Spread out candy mixture on a cookie sheet lined with wax paper.  Refrigerate until cool and the candy has hardened.  Break Peppermint bark into pieces.

        This makes an excellent holiday treat and it’s so easy to make!!!!! 

 

 

White Dipping Sauce for Barbecue Chicken

1 cup of Mayo

½ tsp. White vinegar

½ to 1 tsp. Lemon Juice

¼ tsp. Sugar

¼ tsp. Salt

1 tbsp. Pepper

     Mix all ingredients together.  If your mixture gets to runny, you can thicken it by adding more mayo.  Then enjoy with your Barbecue Chicken.

This is a southern recipe from my Sister-In-Law, Mary Elam who lives in Florence Alabama.  This is what they dip their Barbecued Chicken in and is very good.

Mom’s Apple Dumplings

 

Ingredients:

2 packages of crescent rolls
2 or 3 granny smith apples, cored, peeled and sliced
12 ounce can of mountain dew
1 1/2 cups of sugar
2 teaspoons of cinnamon
2 sticks of butter

Pre heat oven to 350 degrees. Roll 2 or 3 slices of apples in each crescent roll. Mix together butter sugar and cinnamon. Place dumplings in a 9 x 13 inch pan that has been spray with non-stick cooking spray. Pour mixture over dumplings. Then pour on the can of mountain dew. You can use
sprite or 7up too. Bake for 25 minutes then turn dumplings over. Bake for 20 more minutes. The dumplings will start to brown.
Cool for a few minutes. Best served warm. You can also top with vanilla ice cream for a little added kick.

 

 

 

Homemade Chicken Salad

 

6 chicken breasts, cooked

1 small onion

2 stalks of celery

½ jar (16oz.) sweet relish

½ mayo

2 boiled eggs

1 tsp. Salt

Dash of pepper

 

Chop chicken, onion, celery, and eggs.  Add relish, mayo, salt, and pepper.  Mix together.  This is good on white or wheat bread or on crackers.
