Cinnamon-Banana Pancakes

Ingredients
  • 2 eggs
  • 1/2 cup light sour cream
  • 1 1/4 cups milk
  • 1 cup flour
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • 3/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 small banana, coarsely mashed, about 1/2 cup
  • Maple syrup
Preparation

In a medium-sized bowl, whisk eggs with sour cream and milk until blended. In a large bowl, use a fork to stir flour with sugar, baking powder, cinnamon and salt. Make a well in centre of dry ingredients. Pour in egg mixture. Fold together until almost blended. Stir in banana. Coat large skillet with vegetable oil, or cooking spray. Pour 1/4 cup batter onto griddle for each pancake. Place in a 200o oven until all pancakes are cooked.
