Zucchini Croquettes

Ingredients
  • 1 � lb. Zucchini
  • 3 Tbls. Fresh parsley, chopped
  • 1 cup Bread crumbs
  • 2 Tbls. Grated cheese (parmesan or Romano)
  • 2 eggs beaten
  • 3 green onions, chopped
  • Flour
  • 3 - 4 Tbls. Oil
Preparation

Grate the zucchini, sprinkle with salt. Leave in colander 30 minutes. Squeeze until dry (drier)

Chop green onions. Mix all ingredients together, except, flour and oil. With hands, shape mixture into small balls. Roll into flour. Pat down to cake shape.

Heat oil in pan. Fry cakes until golden. If you wish, absorb excess oil with paper towels.
