PASTA, SHRIMP & SALMON SALADIngredients
Cook the pasta in boiling salted water until al dente, 6 - 8 min. Drain rinse with cold water and drain again. Drizzle with a bit of olive oil to prevent sticking. Set aside For the dressing. In a small bowl, combine the lemon juice, tomato juice parsley & tarragon. Slowly whisk in the oil. Season with salt and pepper. In a large bowl, combine the pasta & dressing. Toss to coat. Add the shrimp & salmon & toss until all ingredients are well incorporated. Transfer to a serving bowl. Garnish with chives & tomatoes. Serve immediately. Source:Ellen Drake Comments:: EX !!!
