PASTA, SHRIMP & SALMON SALAD

Ingredients
  • � lb. dried small pasta shells
  • 1 � tbsp. fresh lemon juice
  • 1 � tbsp. tomato juice
  • 1 � tbsp. chopped fresh parsley
  • 1 � tbsp. chopped fresh tarragon
  • 4 � tbsp. extra virgin olive oil
  • Salt & pepper to taste
  • � lb. medium shrimp, cooked
  • � lb. Smoked salmon, cut in thin strips
  • 2 plum tomatoes, quartered
  • Chopped chives for garnish
Preparation

Cook the pasta in boiling salted water until al dente, 6 - 8 min. Drain rinse with cold water and drain again. Drizzle with a bit of olive oil to prevent sticking. Set aside

For the dressing. In a small bowl, combine the lemon juice, tomato juice parsley & tarragon. Slowly whisk in the oil. Season with salt and pepper.

In a large bowl, combine the pasta & dressing. Toss to coat. Add the shrimp & salmon & toss until all ingredients are well incorporated. Transfer to a serving bowl. Garnish with chives & tomatoes. Serve immediately.
