INDONESIAN BEEF FRIED RICE

Ingredients
  • 1 tsp vegetable oil
  • 1 egg, beaten
  • 1 slice bacon, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, halved lengthwise and sliced
  • 2 cups sliced mushrooms
  • 8 oz. lean ground beef
  • 2 tbsp. each ketchup and soy sauce
  • 2 tsp. each packed brown sugar and paprika
  • 1/2 tsp Asian chilli paste (or 1/4 tsp hot pepper flakes)
  • 3 cups cooked parboiled rice
  • 1 large tomato, cut in wedges
  • Half English cucumber, thinly sliced.
Preparation

In large non-stick skillet, heat oil over medium heat. Pour in egg, rotating skillet to coat bottom; cook for 3 minutes or until completely set. Transfer to cutting board; cut into strips. Set aside.

In same skillet over medium-high heat, cook bacon, onion, garlic, zucchini and mushrooms for about 8 minutes or until starting to brown. Add beef, cook, breaking up with back of spoon, for 5 minutes or until no longer pink.

Add ketchup, soy sauce, sugar, paprika and chilli paste; cook, stirring, for 2 minutes. Stir in rice; reduce heat to low and cook, stirring, for about 3 minutes or until heated through.

Serve garnished with egg strips, tomato and cucumber.
