BANANA CHOCOLATE CHIP MUFFINS

Ingredients
  • 1 cup All purpose flour
  • 1 cup Whole wheat flour
  • � cup Granulated sugar
  • 2 tsp Baking powder
  • 1 tsp Baking Soda
  • � tsp Salt
  • � cup Chocolate chips or chopped walnuts
  • 2 cups Mashed bananas (about 5) Ripe
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 2 Eggs
Preparation

Line muffin cups with paper liners or grease: set aside.

In large bowl, whisk all purpose and whole wheat flours, sugar, baking powder, baking soda and salt; stir in chocolate chips. In separate bowl, whisk together bananas, oil, milk and eggs; pour over dry ingredients and stir just until blended.

Fill prepared muffin cups three-quarters full. Bake in center of 350o oven until tops are firm to the touch, about 25 minutes. Let cool in pan on rack for 2 minutes. Remove to rack to let cool completely.
